While I wouldn't give up living in New York City for anything, one of the downsides of apartment life is that my wife and I have a stove so small it's effectively impossible to fit pots and pans onto all four burners at the same time. That's one of the reasons I love my Staub cocotte so much. Because of my work (and definitely not because of a compulsive shopping habit), I have about as robust and elite a cookware collection as anyone could want. Multiple enameled Dutch ovens; two of each common size of cast iron skillet (much of it vintage); carbon steel skillets from large to small; two woks; heavy copper pots and pans that I could sell for an early retirement; fancy stainless steel up the wazzoo; not to mention specialty pieces like a Moroccan tagine, Japanese donabe, and clay Peruvian olla. But somehow I've continued to live with the same 2-quart saucepan my mom bought me for my freshman-year college dorm 26 years ago. On the one hand, it still works, though its screw-on handle comes loose from time to time, and its bottom-clad design means it's more prone to scorching in the corners and on the sides. I think this year it's time to finally upgrade to something fully-clad with a solidly riveted handle. Though...maybe I should still keep the other, in case I need both. — Daniel Grizter
