Now that the weather is warmer, my bread machine has been getting more of a workout. When it's really warm, sandwiches are often on the menu for dinner, but I still want homemade bread for those sandwiches.

Sure, it doesn't make a lot of sense to heat up the house baking bread, just so I can eat a cold sandwich later, but fortunately the bread machine doesn't heat up the house much at all.

The vinegar in this loaf adds just a bit of the tang that you'd get in a long-fermented dough. Sure, it's a cheat, but it makes a good loaf of bread.

If you don't have a bread machine, you can use this same formula to make a standard loaf of bread - but increase the yeast to 2 1/4 teaspoons.

Bread Machine Caraway Rye Recipe

Active 10 mins
Total 4 hrs
Serves 10 to 12 servings
Makes 1 loaf

Ingredients

  • 1 teaspoon instant yeast

  • 1 tablespoon sugar

  • 4 1/2 ounces (about 1 cup) rye flour

  • 9 ounces (about 1 3/4 cups) bread flour

  • 1 teaspoon salt

  • 1 tablespoon caraway seeds

  • 1 tablespoon balsamic vinegar

  • 1 1/4 cups water

  • 1 tablespoon olive oil

Directions

  1. Put all ingredients into your bread machine in the order recommended by the manufacturer. Set the machine for a standard loaf (if the machine has several settings), a large loaf, and a dark crust.

  2. When the bread is done, remove it from the machine, remove it from the pan, and let it cool completely on a rack before slicing.
