If you like Campari and soda, this offers a little bit more—fuller body, a tart and fruity bitter edge, and a bass note from rum. This recipe is adapted from Jim Meehan.

Campari Flamingo Recipe

Serves 1 serving

Ingredients

  • 3/4 ounce freshly squeezed juice from 1 to 2 limes

  • 1 1/2 ounces aged rum, such as Appleton Estate

  • 1/2 ounce Campari

  • 3 ounces pink grapefruit soda such as Fizzy Lizzy

Directions

  1. Fill a cocktail shaker with ice. Add lime juice, rum, and Campari. Shake well.

  2. Strain into ice-filled rocks glass. Add grapefruit soda, stir gently and serve.
