The Dutch Alps

This variation on the classic Irish Cocktail uses genever instead of Irish whiskey, and herbal genepy instead of absinthe. Rather than sweetening with orange curaçao, this one calls for rich, citrusy Amaro Nonino. The original is garnished with an olive—ditch it here for a few drops of saline solution. Just be careful with it, as a little goes a looong way.

Note: To make saline solution, mix 1 tablespoon kosher salt with 1 cup water.

Ingredients

  • 2 ounces genever

  • 1/2 ounce Dolin Genepy des Alpes

  • 1/4 ounce Amaro Nonino

  • 1 barspoon Luxardo maraschino

  • 4 drops saline solution (see note)

  • 1 dash orange bitters

  • Lemon twist for garnish

Directions

  1. Add genever, genepy, Amaro Nonino, maraschino, saline solution, and orange bitters to a mixing glass. Full with ice and stir until well chilled, about 20 seconds.

  2. Strain into a cocktail glass, garnish with lemon twist and serve.
