So you've mastered the art of plain frozen yogurt and now you're ready to start taking flavors into your own hands. Come summertime, nothing brightens up yogurt like fruit, and frozen yogurt takes well to all kinds.

I particularly love fruit that has some acidity to back up yogurt's natural tang. And I always use the ripest, most fresh fruit I can find. Yogurt has a way of dulling down fruit flavors, so the bolder your fruit, the better. As for proportions, the recipes here range from one to two parts yogurt to one part of fruit juice or purée. Richer, jammier fruit purées need less sugar than thin juices like orange.

Above all, frozen yogurt should be light and refreshing, not heavy and sugary. These recipes are all about real fruit flavor—something you won't find at any fro-yo chain.

Orange Creamsicle Frozen Yogurt

Remember creamsicles? What, you haven't had one since summer camp? Well you should change that with this extra tangy yogurt version. This recipe scoops like a light sorbet, but there's nothing light about the orange flavor, which is bolstered by a tablespoon of orange zest.

A proper mango lassi, perfumed with ripe mango and jolted with tartness to cut through all that sugar and yogurt, is one of the best ways to cool down during mango's summer season. This frozen yogurt follows the same principle: fresh mango, lime juice and zest for fragrance and acidity, and a creamy yogurt to tie the whole thing together. Serve it with some poundcake, berry cobbler, or pineapple upside down cake.

Raspberries aren't just sweet. They're tart, a little citrusy, and the seeds have a bitter bite—all nuances that get lost when you add them to dairy. But bittersweet Campari and aromatic orange zest bring all the raspberry's core raspberry-ness right to the front of this frozen yogurt, which is tangy and fruity on first bite with a little nip of bitterness as it melts on your tongue.

Using brown sugar instead of white adds a subtle caramel molasses note to yogurt. It also enhances the dark, rich flavor of blackberry purée. A pinch of clove adds more spice.

Strawberries are notorious for turning ice cream icy, so in this recipe they're cooked down with lemon peels and sugar and blended with rich Greek yogurt. The result is a full-flavored fro-yo that you can still scoop with ease.
