I'm a Chilean food writer and self-taught cook with a background in philosophy and a masters degree in Integrated Food Studies. I specialize in traditional Chilean food and South American grilling. I'm a cookbook author and the director of the Chilean food and wine magazine Revista Fondo. I'm currently based in Santiago de Chile, after living abroad in Columbus (OH), and Copenhagen (DK).

Experience

I'm a self-taught cook and food writer born and raised in Chile. I grew up in a family restaurant in a little town in the south of the country, and since then, food has been the center of my life.

My academic background is in philosophy and education, and I hold a masters degree in Integrated Food Studies. I lived 3 1/2 years in Columbus, Ohio and 3 1/2 years in Copenhagen, Denmark, which allowed me to work as a cook, to learn about world cuisines, and also to teach about Chilean and South American food (both independently and in formal schools like CIA, Basque Culinary Center and Meyers Madhus).

I'm a coauthor of a Chilean inspired, creative grilling cookbook called "Todo a la Parrilla" (2016). I'm also knowledgeable in fermentation and foraging.

I've been writing -since 2011- about food, travel, wine and beer in several printed and digital media both in Chile and the US (including The Kitchn and The New Worlder). I was also the host for a sandwich tour in Santiago for "Somebody feed Phil" (Netflix, 2022) and the Chile pizza expert for the Phaidon book "Where chefs eat pizza".

Currently I'm the director of Revista Fondo, a online food and wine magazine based in Santiago de Chile, where I'm located again since 2020. I work as a freelance writer, editor and recipe developer.
