When shaken, kale juice makes an especially frothy daiquiri. Fresh ginger spices things up nicely.

Note: Your juice yield will vary depending on which juicer you use. We found that it takes about 3/4 pound of kale to produce 4 ounces of juice.

Kale Ginger Daiquiri Recipe

Ingredients

  • For the Ginger Syrup:
  • 1 cup sugar
  • 1 cup water
  • 1/2 cup fresh ginger, peeled and roughly chopped
  • For the Cocktail:
  • 1 1/2 ounces white rum
  • 3/4 ounce fresh lime juice from about 2 limes
  • 3/4 ounce ginger syrup
  • 1/2 ounce fresh kale juice (see note)

Directions

  1. For the Ginger Syrup: Combine the sugar, water, and chopped ginger in a small saucepan over high heat, stirring frequently. Bring to a boil then reduce heat to a simmer for 5 minutes. After 5 minutes, remove from heat and let cool to room temperature. Strain to remove the ginger and refrigerate until cool.

  2. For the Kale Ginger Daiquiri: Fill a cocktail shaker with ice and add rum, lime juice, ginger simple syrup, and kale juice. Shake until well chilled, about 20 seconds. Strain into chilled coupe glass and serve immediately.
