Mahi Mahi with Mango Salsa Recipe

Ingredients

For the Salsa:

  • 2 1/2 cups chopped, peeled mango

  • 1 cup diced red onion

  • 1 jalapeño, finely diced

  • 1 teaspoon lime zest

  • 3 tablespoons lime juice

  • 1 1/4 cups chopped red bell pepper

  • 1/4 cup chopped cilantro

For the Mahi Mahi:

  • 2 pounds mahi mahi

  • 1 tablespoon olive oil

  • Salt and pepper

Directions

  1. In a medium bowl, combine ingredients for salsa. Mix well and set aside.

  2. Heat a ridged grill pan over medium high heat. Rub fish with olive oil and season with salt and pepper. Grill until opaque and cooked through, about five minutes per side. Top with salsa.
