Strawberry Sauce for a Daiya Sundae

Yield: 4 cups
Active time: 15 minutes
Total time: 70 minutes

Ingredients

12 oz strawberries (about 16 medium strawberries)
1/4 cup coconut oil
.5 ounces freeze-dried strawberries (about 1/4 cup)
4 oz confectioners sugar

Directions

1. Put strawberries and coconut oil in a 1-quart saucepan over medium heat. Cover and cook until strawberries are soft and have released their juices, about 10 minutes. During this time, uncover and stir and mash strawberries every few minutes to help them along. After 10 minutes, when strawberries are soft enough to be squished by a spoon, remove mixture from heat and pour into a heat-safe bowl.

2. Stir in freeze-dried strawberries and confectioners sugar. Using an immersion blender, blend until completely smooth and emulsified. At this point, the mixture should be about 115°F.

3. Chill in refrigerator for about 40 minutes, until the mixture is 65°F.

4. Remove Daiya Dessert Bars from the freezer, unwrap, and place on a plate. Dollop a spoonful of strawberry sauce over the bar and decorate. Put back into the freezer to harden, about 20 minutes. Enjoy!
