Experience

Pailin Chongchitnant grew up cooking with her family in Southern Thailand. After receiving two degrees from the University of British Columbia in Nutritional Sciences and Home Economics Education, she graduated from Le Cordon Bleu College of Culinary Arts in San Francisco.

After working in professional kitchens, Chongchitnant launched her YouTube channel Pailin's Kitchen and in 2016 published Hot Thai Kitchen: Demystifying Thai Cuisine with Authentic Recipes to Make at Home. She co-hosts the Canadian cooking show One World Kitchen.

What's your desert island food and why?

"Hainanese chicken rice, Thai style (kao mun gai). This is a dish with relatively mild flavors so I can never get tired of it, but it's unbelievably delicious. It also has sentimental value because my grandmother is from Hainan and makes this for me every time I see her."

What's your favorite condiment and why?

"Prik nam pla—the ultimate Thai condiment made from fish sauce, chilies, and a squeeze of lime. It has salt, umami, spicy, and a little acidity ... a combination that basically improves all dishes."
