For the rum, choose something dark and, if you want to replicate the Colonial experience, something funky.

For a refreshing non-alcoholic treat, simply leave out the rum.

For great alternatives to the club soda or seltzer, try a spicy ginger beer or a crisp tonic water. Or add shrub to a glass of white or sparkling wine.

Ingredients

  • 2 ounces dark rum

  • 1/2 ounce shrub syrup

  • 3 ounces club soda or seltzer

Directions

  1. Fill a tall glass with ice. Add rum, shrub syrup, and soda. Stir gently to mix and serve immediately.
