Thank you, sleuth Zach Brooks. In response to a Serious Eater, desperate to know what's in that green sauce crack at Sophie's Cuban Cuisine, he found out: “A modification of Peruvian aji, the only difference is that we are using jalapenos instead of the Peruvian chile, which is called rocoto.” And to the mayo haters who assumed "aji" meant mayo was involved, not true. A call to Sophie's just now confirmed the white stuff ain't in there.
