This is my new go-to hot weather refresher. It can be hard to get rhubarb flavor into cocktails, but I have a secret weapon: Liber and Co's awesome Rhubarb and Ginger Shrub. A tart and citrusy combination of this shrub plus lemon juice bring out the agave flavors of blanco tequila, while a touch of St. Germain sweetens things up and adds a floral accent.

Serves 1 serving

Ingredients

  • 1 1/2 ounces blanco tequila
  • 3/4 ounce Liber and Co Rhubarb and Ginger Shrub
  • 1/2 ounce juice from 1 lemon
  • 1/2 ounce St. Germain
  • 1 ounce club soda
  • Garnish: lemon wheel

Directions

  1. Add tequila, shrub, lemon, and St. Germain to cocktail shaker. Fill shaker 2/3 full with ice and shake vigorously until the outside of the shaker begins to frost.

  2. Double strain into a chilled cocktail glass, top with club soda, garnish with lemon wheel, and serve.
