This spin on a Pimm's cup uses a good dose of Aperol, and is named for an old Aperol advertisement that claimed that Aperol was good for maintaining your slim figure. Fresh mint, cucumber, and tonic keep the drink bright and refreshing.

Recipe Details

The Modern's Girovita Recipe

Serves 1 serving

Ingredients

  • 3 (1/4-inch thickslices cucumber

  • 1/4 ounce simple syrup (see note)

  • 4 large mint leaves

  • 1 1/2 ounces Aperol

  • 1 ounce apricot liqueur such as Rothman & Winter

  • 1/2 ounce juice from 1 lemon

  • 1/4 ounce Pimm's No. 1

  • Splash tonic water

  • Garnish: cucumber wheel and mint sprig

Directions

  1. In a cocktail shaker, muddle cucumber and simple syrup 10 times, then add mint and tap gently with muddler 5 more times. Do not over-muddle mint. Fill cocktail shaker with ice. Add Aperol, apricot liqueur, lemon juice, and Pimm's. Shake well, then pour unstrained into highball glass.

  2. Top with tonic water, garnish with cucumber wheel and mint sprig, and serve.

Notes

To make simple syrup, combine 1 cup water with 1 cup sugar in a small saucepan and heat over medium heat, stirring constantly, until sugar is dissolved. Cool before using. Simple syrup will keep in a sealed container in the refrigerator for up to 5 days.
